Epic Beer Is Good

Latest Activity

With the modified malts we have today, modified mash is of little concern, unless you are trying to achieve a certain finish.

Don't get too hung up on water. There's plenty of other things to worry about first. However.... in general, all over Wellington (and probably NZ I imagine), you will always need to acidify to get the right mash conditions. Acidifying will let y...

But that's referring to a mash with distilled water? I use Palmer's spreadsheet along side a pH meter and have always been within range for my pH. From what I've read it's better to look at the SRM/EBC of the beer and go off that and calculate a...

Meh I don't know aye because I as I said before my mash water with the 13%er was 200ppm of Carbonate and it bought the mash to 5.3, Maybe th Kolsch Malt helped as well?

Palmer reckons otherwise. 10% roast might not bring it down enough according to this: When you mash 100% base malt grist with distilled water, you will usually get a mash pH between 5.7-5.8. (Remember, the target is 5.1-5.5 pH.) The natural acidi...

it sounds like depending on the grains being used, we need to add more, to either raise or lower the PH. Spot on bro. I could go into more detail but John Palmer does it well here. That should answer your questions...and probably make you want ...

so, does the wellington water need to be raised or lowered in general? also, it sounds like depending on the grains being used, we need to add more, to either raise or lower the PH. how much effect does the grain have on PH during mashing? which ...

Epic Halcyon at Thornbridge

Still all go and we’ve just finished an awesome collaboration with Luke Nicholas of Epic Brewing Company over in New Zealand. Luke was over here to launch and promote Epic Pale Ale which he had been invited to brew with Everards Brewery in Leicester as part of the JD Wetherspoons International Real Ale Festival. Luke is a highly awarded New Zealand brewer with a vast amount of experience. He has twice brewed beers that have won the Supreme Champion Beer of New Zealand (including Epic Pale Ale, w… Continue

Epic + Thornbridge = kiwi collabrotive brew

Just a quick update, I'm returning to the UK on the 13th April to pull the first pint of the Epic Pale Ale I brewed a few weeks ago at Everards in Leicester for the JD Wetherspoons International Real Ale Festival.

While I am there I am going to be doing a collaborative brew with Kelly Ryan (kiwi) at Thornbridge Brewery. We are thinking of doing a double IPA. Will keep you posted as things develop.

Thinking of a weekend in Belgium, any tips on where to go, or what to see?

Hi Luke - thought I would let you know that I dropped into see Mike at Prenzels today and offered to supply him with some His Majesty for the tasting you are running on Tuesday. I hope to be tagging along myself. See you then.

Just to clarify my comment on that DB vs Epic thing.

I hate DB.

I think Epic is great.

Just a few times I've spent a bit of money on good beer, got a bit carried away and then the next morning can not remember what any of the beers were like. Kind of disappointing.

I guess the comment could have been read as Epic being overpriced, I don't believe it is, just wanted to clarify haha.

Luke,

I've been hoeing into the 500ml Epic from Gate Pa New World in Tauranga. I must say the quality is supurb, not a gusher in site. And... they don't keep it in the bloody fridge. It has pride of place sitting on top of one of the chillers in the deli section. Oh the frustration.

What made you go 500ml? I hope it wasn't my comments re the ability to charge a little extra, cause I was really enjoying the 6-pack at $16 on special.

$26 for four bottles is hurting, and I bet your packaging costs have gone down too.

I'm whinging but I guess I'm still buying it!

Cheers
Craig.
