I get some herbaceous Belgian flavours only when it's room temperature. Any kind of chill hides it all.

Took 5L out of a batch of my 6.2% gingered ale and threw in 250g of cranberries. Added a nice cranberry tartness and a reddish tinge.

I've been using an insulated 40L plastic fermenter as my mash tun for months now and have noticed no ill effects. I wouldn't worry about a chilli bin either, you'll be fine.

As far as I'm aware Ben has a small brewery on Waiheke isl, so this may have come from there. His last release was the Dortmunder under the NZNBC label (New Zealand Natural Brewing Company). Odd that it's appeared in the US before here though.

Weyermann or Peat smoked malt? If it's peat smoked then it'll be undrinkable for a year or so.

Profile Information

Favorite Beers?
Tripel is my favourite style, so Westmalle Triple, Tripel Karmeliet, Moa St Josephs, Corsendonk Agnus or any authentically done Abbey style Tripel is highest on my list. Otherwise, sharing a ( at least 5 year old) Thomas Hardys Ale with a friend is unbeatable, or any kind of crazy Belgian Strong style (Oerbier, Tremens, Cochonette etc).
In short, I like Belgian beers!
Favorite Breweries?
Emersons, De Dolle, Brouwerij Huyghe, Trappist anything (excliding La Trappe), Pink Elephant, Rodenbach.
Favorite Bars/Pubs?
Malthouse, Bar Edwards. Regionals, but its not really a bar/pub. I do give them most of my money though.
About Me:
I'm a 3rd year Bsc student, majoring in chemistry. I also write the beer column for 'Salient' the VUW student mag as 'dave the beer guy'.
I'm always keen to try something new, I hope to have rated thousands of beers in the next few years.

Ahhhh, Dave. You're the greatest. I miss Wellington and it's 1337 beer culture.
I had the chance to get a free La Trappe glass the other day, but they had sold out. At first I was disappointed, then I realised that La Trappe is rather crap. But then again, Moosehead is rather crap - the glass is entirely sentimental value... Plus some practical value for those lumbering stouts that fit no glass comfortably...
