I've used Golden Promise and US-05 in all of my american style beers. I've noticed a character in all which is easily perceived as Diacetyl. I find after 3ish weeks conditioning (bottle or fermenter) it cleans up and the hops show prominently.
They're just in a silly competition with that German brewery to make the worlds strongest 'beer'. I think once you ice distil a beer, it is no longer beer. As Kieran HM has said: if you class it as beer, you might as well class whiskey as beer.
Awesome. I've had similar situations at Hashigo with the Nerdy. Had a guy the other night begrudgingly buy one, and cringe at the flatness. He must've got over it fast though because he drank nerdy for the rest of the night!
Had anniversary beers last night,
Emersons Extra Pils - Yum, very good pilsener. Gutsier than the usual.
8Wired IPA Batch 2 - tasting v. fresh.
Rogue Chipotle - A very cool beer, spiciness builds slowly, smoky flavour.
Alesmith Anvil ESB - WAY to fi…
Hi Wellington. I recently stuffed up and forgot to get my grains crushed when I ordered them, so I've got 4kg of malt and no mill. Is there anyone in Wellington city with a mill I can borrow to crush it?
I don't keg but I'm gonna mash quite high so I get lots of unfermentable sugars which will hang around at the end, and I'll ditch the lemons I reckons.
It'll probably be 4-5%
Here we go then, I've spiced it up a bit. Should be an... interesting... beer... thing... Think I'll stick to sugar on this one, and try honey on the next one and see the difference.

This thread has inspired me, I'm going to brew an alcoholic ginger beer next week - just wondering about a few things.
Here's as far as I've got recipe wise, I think I just need help when to add things and how much to add:

Tripel is my favourite style, so Westmalle Triple, Tripel Karmeliet, Moa St Josephs, Corsendonk Agnus or any authentically done Abbey style Tripel is highest on my list. Otherwise, sharing a ( at least 5 year old) Thomas Hardys Ale with a friend is unbeatable, or any kind of crazy Belgian Strong style (Oerbier, Tremens, Cochonette etc).
In short, I like Belgian beers!
Favorite Breweries?
Emersons, De Dolle, Brouwerij Huyghe, Trappist anything (excliding La Trappe), Pink Elephant, Rodenbach.
Favorite Bars/Pubs?
Malthouse, Bar Edwards. Regionals, but its not really a bar/pub. I do give them most of my money though.
About Me:
I'm a 3rd year Bsc student, majoring in chemistry. I also write the beer column for 'Salient' the VUW student mag as 'dave the beer guy'.
I'm always keen to try something new, I hope to have rated thousands of beers in the next few years.
Hi David, I am coordinating the volunteers for BrewNZ. I noticed you were interested. Drop me an email at stephaniecoutts@yahoo.com.au. I can send you the volunteer form. Steph.
Ahhhh, Dave. You're the greatest. I miss Wellington and it's 1337 beer culture.
I had the chance to get a free La Trappe glass the other day, but they had sold out. At first I was disappointed, then I realised that La Trappe is rather crap. But then again, Moosehead is rather crap - the glass is entirely sentimental value... Plus some practical value for those lumbering stouts that fit no glass comfortably...
