it's a new world style... If I like where it is headed I might try it again with a Belgian yeast (or two).

I'd recommend about 1.6g/L with that Cascade. Or 1.4g/L Cascade and 0.2g/L Sauvin. I don't know why, I've just got a gut feel on it. I'd not recommend it first time but a little CaCl wouldn't be out of place if you want to lift sweetness.

I've not really read this and shouldn't really even have the time to comment (ssshh, don't tell the boss). I suggest you talk to Ian Caig and Nick Paige about what has been happening down here in Wellington. We've gone from hardly a showing to a gr…

I was asking Michael if I could be in his support crew for next year's Karapoti... how good is that man - Karapoti in the morning, beer festival in the afternoon!!! Craig - I actually shaved that morning but there's something about a stadium full o…

the beers i've tried are a mix - from one of the worst acetic experiences I've had (in their bitter), through a splendidly aromatic Framboise (not quite as good in the mouth), to a truly world class drop in their Baltic Porter... I'd not miss them…

About Me:
Dad of three young lads, boyfriend, brewer, beer lover, tramper, cyclist, business analyst, HL7 specialist. Yeastie Boy.

Yes, it is me, and it is my girlfriend, and yes - we are carrots! She is beer geek friendly too (though of the 200+ beers she's tasted only Verhaeghe, Liefmans and Silly seem to getting the thumbs up).

Great links:
flavour descriptors... or should that be flavor?
Malt names and comparative names across different companies/countries... e.g. Biscuit = Aromatic = Victory = Amber = Melanoidin... not exact but very good.
