Steeping is dissolving the sugars in water and draining that off to add to your wort. Mashing is soaking the crushed grain at a precise temperature to activate the natural diastatic enzymes which convert the grain's carbohydrates into sugar - which…

The definition of "specialty malt" is I guess simply the amount you would use (in comparison to your "base" malts). Base malts make up most of the fermentables in your beer. Specialty malts make up a much smaller percent, and contribute those "speci…

Brewjolais Day at Mac's Brewbars in Auckland, Wellington, Nelson & Christhcurch
April 1, 2010 from 6pm to 8pm
SOBA is excited about the April 1st release of Mac’s Brewjolais seasonal beer, and is looking to celebrate the event in style and en masse. Brewjolais is brewed to celebrate the hop harvest, and uses freshly picked “wet” (undried) hops from Nelson…

At the SOBA meeting at Galbraiths on Saturday I tried the Sirocco. Very nice, but I got a tiny bit of burnt character, I found it a little offputting. I went back to the Bob Hudsens. What an utterly spectacular pint it is. They've just got that beer…

Beer engine reconditioning, part 1

If you follow this thead you'll know that I recently purchased 2 beer engines off trademe.

Seeing as my brewing inclination is towards British styles - real ale, I've been after a beer engine for ages. Usually they get snapped up quick smart by Greig (who hasn't shared with me the highly secret search/RSS query that tweets him the instant anything remotely resembling "beer e… Continue

We were aiming for slightly more than 45L, but never mind... =) Assuming we get the other HWC set up in the next couple of weeks I think the plan for the next batch is to do around 60-70L!

Thanks for the info on the HWC thing a while back - we have now got most of what we need, set up with a 80L mash tun, 100L boiler, and will shortly have a (probably) 135L HLT. Looking forward to really getting it cranking - did a 45L batch a couple of weeks ago, but there's plenty of room to go bigger...

Cheers mate. I did some research and it's not the sanitation that is the problem, but copper leaching into the beer. That said copper is beneficial on the wort side of the process. Damn I want a copper kettle!

Thanks for the advice mate. Yes, my gear technically does 50L, but I haven't been game to do any more than about a 40L boil which ended up just under 30L by the end. I figure if I go to a (say) 135L cylinder for the HLT I can always split the boil across the two existing gas-fired kettles (one converted keg with tap, the other just a big-ass 40L pot) and then combine (or not) in fermenters to make sure it's all consistent.

The major problem is having a brewing partner I have to split every batch with - volume is king!

Interesting timing... I'm researching using HWCs for HB. Not having seen the inside of a HWC, do you think a smaller one (50-70l) could be converted to be used as a fermenter?

Hey Barry,

I hear you've got a twin hot water cylinder setup for your brewery and am keen to know a bit about it - what size cylinders do you use, and are they copper or steel? Thinking about going this way myself to up the volumes from the 50L vessels I have at present.

Any advice gratefully recieved.
