From beer for a year

My first and most surprising beer of the day was the Emerson’s Bird Dog. I say surprising because, unlike any Emerson’s beer I’ve had before, it was hoppy! And not in the polite, ever-so-gentle way of British pale ales, but in a this-could-have-been-brewed-by-Luke-Nicholas kind of way.

It did actually really remind me of the hoppy Epic beers. It had a huge aroma of punchy fruit and citrus (both NZ and US hops I think), a resiny bitterness, and a reasonable pillow of caramelly malt to soften it out. I had it twice, and it was the beer that I told everyone at the festival to go and try. (“It’s worth that effing ridiculous queue!” I said.)

Beerfest is never going to be as beloved by craft beer lovers as Beervana. It appeals to a broader/different range of people – and while some beer geeks might feel uncomfortable about sharing their hobby with ‘bogans’ – that’s got to be a good thing at the end of the day. There will be people who see Beerfest purely as an excuse to get pissed during the day, but if they come away remembering even one beer that they liked and buy it again, then surely that’s a win for craft beer. (Unless of course that one beer was a Carlsberg, but it won’t be.)


Bloody confused now this is not a hoppy ipa.......

Going to run with this and I am going to bottle condition...   would be good with massive dry hop and keg but I want to shoot for the 500ml bottle edition....

Hey, it's a great beer. Interesting to see how your's turns out. I might be wrong, but I think Bird Dog has Amarillo in it. brewshop.co.nz has fresh stock too.  I recall reading on the sheets they had at the brewery when it was a brewers reserve that it uses Columbus Cascade and Amarillo. There sure is a big orange hit in there from the Amarillo. 

Added in some Armarillo on the day, out to buy another bottle of bird dog for a side by side.  Its a good beer regardless....

Cool. That will be interesting. 

 I did a big 12% coffee stout a while back. It was fantastic. I'm thinking dial the ABV and possibly IBU back a little and sub the coffee for vanilla pods and cocoa nib to something like this. I its the same recipe minus 1 can malt extract and 200g coffee in primary.

Can any one advise on amounts of vanilla pods and cocoa nib? I want both to be clearly present but subtle.

I wouldn't add the cocoa nibs to the boil... but at flame out or secondary. They can be really astringent... yer average pack from the organics shops is 28g and that is heaps.

I have got a Rye beer going on tomorrow with a good portion of wheat and rye malt.

46% Golden Promise

30% Rye

24% Wheat

I was going to do a BIAB and so have the advantage of doing my first step mash.

I was planning on an acid rest @ 35C for 5 mins, a protein rest @ 50C for 20 mins, Saccharification rest @ 67C for 45 mins followed by a mash out @ 77C for 10 mins.

This is my first step mash so was just wondering if my temps and times are looking good. Any advice?

I always though. 20%rye was enough? It can be pretty potent. Xx
It is from BCS so I would assume the recipe is pretty solid. We'll find out anyway. I'm going to do BIAB to avoid any sparging issues from all that wheat and rye. You done a step mash yourself Rob?

Planning a good strong IPA to use up the last of my Simcoe and Amarillo and looking for a third variety to mix in with them, possibly either Columbus or Chinook, unless there are any better suggestions?
