I distinctly recall you hassling me about boiling in two pots not so long ago.

I still think boiling in two pots isnt quite as classy as BIAB tho :oP haha
First lager in about 18months last night - hopefully should be ready to chop over the Christmas break at the beach.

92.5% Weyermann Pils
7.5% Carapils
64.5C mash for 2 hrs (distracted doing other things)
24.5 IBU of Pacific Jade @ 60min
Equal additions of Czech Saaz at 25,15,0 for another 10 IBU
34/70 yeast to ferment

Used Koppafloc for the first time in place of standard Irish moss and was really impressed with it - super clear wort into the fermenter after a little cold break to start. Chilled to 10C overnight, pitched the yeast this morning.

Not being a regular lager brewer I'm not 100% sure on the fermentation profile so wouldn't mind some advice. I was planning on 2 weeks at 10C, then raising it to 18C for 2 days for a d-rest. Then drop it down to 2C for a few days before racking to kegs, and leaving it another month at the same temp. Does that sound about right?

6% Carapils
Truckloads of Czech Saaz at 60,30,15 and 0

37 IBU
Split ferment over Munich Lager 2308 and Czech Pils 2278
CBF day so stayed home and brewed this.

That's a good load of Sauvin - going to be an interesting comparison for sure
Think I only have half that in mine.
All done 27L @ 1.050 on the dot. Had to add a couple of L of water at the end to get me with thin the gravity guidelines otherwise I would have just left it in the early fiddys.

That would have put it in the North Welly Specialty category !
Had a sneaky sample of this. It's dropped to 1.010! Good attenuation from 1 pack of 05 in 27L...

Needless to say it's a bit dry but that shouldn't be too bad a thing. We'll bottle it up this weekend then we'll be good to go for a tasting in a couple of weeks.
Hopefully it'll be North Welly Summer by the time you're drinking it !

Got mine on tap now and had a couple.
I was a bit heavy on the pale crystal.
If I repeated it I'd knock it back next time and maybe go some wheat to 'fluff it up a bit'
But it's more likely to be a North Welly Sauvin Ordinary or Draught

And Let us know how it compares to that smash of yours last year ?
Even out of the fermenter it's tasting better. It's bolder and has more body. The smash was a minimus at 1.035 compared to this one.
