Thanks for that! Much agreed too. I'm thinking 90% smoked extract and 10% of maybe chocolate, rye and crystal malts? Oh yeah, I love The Bishop! :D

I haven't, but it is my understanding that it is almost 100% (98% or so) smoked malt. depending on how smoky you like it you can use it for 100% of the malt bill. I'd guess that 90% smoked extract and 10% crystals would get you somewhere along the...

About Me:
Gosh! Where to start?

I'm rather normal and ordinary, but that's just me. I don't claim I invented the question mark or hear voices in my head, I'm not on any medication or anything like that so I think I might be onto a winner. Though sometimes I get thrown out of bed by this poltergiest thing and slammed pretty hard against the wardrobe doors, but that's ok. I've stapled big pillows to the doors now so I don't get a big door knob in the back, I'm quite used to it. It's kinda fun now, I no longer have to set my alarm as this pissed off ghost has the tendancy to chuck me out at 6:45am, can you believe that? The exact time I get up for work! I'd like to travel a bit more too, I'm thinking the Amazon, I want to introduce olive oil and tuscan spice to the local cannibals, exchange some cooking tips too. Imagine how tough the meat must be? Those poor little darlings. There's never a thing as too much smoked paprika or garlic and herb salt. A delight for the taste buds! I might even try and sell them the odd fridge or two. Maybe even introduce them to the sounds of "Sergio Mendez & Brasil 66 - Mais Que Nada" while the cute little fellows have a big cook up. Aw, bless!

Rye..

Has anyone here brewed a beer using Rye? I just bought a 1kg bag of the stuff the other day. I guessing it might be good for a Saison? I'm told it gives a dry, spicy finish. Is this true?

Hop vines.

Is there anywhere in NZ that sells Hop Vines?

I'm in Wellington and was wondering if there's a place nearby that might have them. Would they be available at any garden centre? (probably not eh.)

If anyone here knows I'd be grateful.

Advice please?

I just recently (Sunday midday) brewed a Bishops Tipple clone. (I'm hoping) It was a partial mash, using:

1.5Ib pale malt,

500gms crystal malt

1oz black malt

1oz wheat malt

A can of coopers real ale for malt extract.

Goldings Hops

750gms Golden Syrup

2oz Molasses

And Safale s-04

The airlock on the fermenter only just started bubbling now when I got home from work. Normally when I brew, the airlock starts to bubble within an hour.

Should I be worried?

Porter

Does anyone have any good Porter recipes they'd like to share? I'm looking at making a Porter for the winter and would like some ideas if possible, I normally do a partial mash (grains, hops and a can of malt extract) and am looking for an excuse to put my black malt and roast barley to good use!

No worries. The only other thought I had was to replace some of the wheat DME with dextrose. You never know how much sugar is in those kits to start with though. Trial & error unfortunately.
