Ingredients for Mashing 


8.78 kg .Pale Malt, Golden Promise 88.51 % 

0.31 kg .Cara-Pils 3.13 % 

0.31 kg .Crystal, Dark 3.13 % 

0.27 kg .Cara Malt 2.72 % 

0.17 kg .Melanoidin 1.71 % 

0.08 kg .Crystal, Pale  0.81 % 

47.00 gm .Columbus (Tomahawk) [14.00 %] (Mash Hop) Hops 7.1 IBU 


Add mash out hops


10.00 gm .Columbus (Tomahawk) [14.00 %] (60

Boil Ingredients 


60 min 55.00 gm .Columbus (Tomahawk) [14.00 %] (60 min)Hops

Final Ingredients 


Repitch 3rd Gen US-05 Slurry

2 gm / L .Amarillo [8.40 %] (Dry Hop 7 days) Hops 

2 gm / L Simcoe [13.00 %] (Dry Hop 7 days) Hops


Now this was a split batch. 27L was dry hopped as above. The other 17L was dry hopped with Simcoe, Amarillo and Columbus (can't quite remember the combo) at 4g/L all up. That 17L went into keg and was topped up with the ama/sim hopped ale. That is the case swap beer.

Had this last night after a 7 hour car drive ... may have sculled it a little fast :o)

Poured a nice clear light brown, good head. Nice flavour, good balance a little bias on the bitter. Really nice beer, and I'd definitely have a second or third.
Pours a deep amber with a nice fluffy head, pungent aroma of citrus, pine resin, passionfruit and hints of sweet toffee malt lurking in the background! More citrus and pine on the palate, lingering simcoe flavours, firm lingering bitterness which is spot on for the style IMO, who would want it less bitter? haha - I also got a bit of hop pellet in my teeth which is allways a good sign ;o) Awesome!!


I also saved 12oz's (whatever that is in mls) for a soup that was absolutely stunning, recipe as follows!! I would highly reccomend this for any IPA lover!!!

Beer and Cheese Soup

1 tablespoon butter or margarine
1/2 cup chopped onion
1/2 tspoon minced garlic
1 tspoon worcestercire sauce
12oz IPA
2 cups Chicken Broth
3 tablespoon corn starch
1 cup milk
1 cup cream
2 cups shredded cheese

1. Melt butter over medium heat, add onion, garlic, worcestersire sauce and stir well!

2. Add beer and bring to the boil, boil for 3 mins to evaporate alcohol (or not).

3. Add chicken broth, bring to the boil, lower heat and simmer

4. Combine corn starch with 3 tablespoons of water, stir until smooth and put aside.

5. Add milk and cream and cheese, stir constantly until cheese melts.

6. Add cornstarch, stirring constantly until thick (about 2 mins)

7. Serve garnished with bacon pieces, oh, and with a glass of IPA!!!

Glad you werent offended that I used your beer for soup :o) I just didnt have any of my own IPA to use and knew after tasting yours at Hallertau that it was up to it!

Bugger, forgot to write up my notes last night so it's all a bit fuzzy. Apologies mate.

Anyway, it poured a nice chestnut brown with a lasting head. Slight haze.

Strong bitterness. Lacks a bit of malt sweetness (seemed very dry). I picked up an odd musky, almost lavender-y note which was a little off-putting. I was struggling to put my finger on what it was, and I don't have the right descriptors yet.

Just looked at the other feedback and no-one else has picked up on it, so it must have been something weird about my palate last night, or a one-off dodgy bottle.

Sorry mate, not meaning to be negative and everyone else seems to like it. I just found something was not quite right. Odd since that mix of hops would normally be right up my street.

No, it was sort of a background flavour, distracting from the hops.
Had this tonight, already had some at WBC so I'm a little biased - I already know how good it is! Got a bit of yeast in the decant so wasn't 100% clear but by time time I got to the bottom of the glass it was bright as a button. Pungent piney hops on the nose with quite a bit of passionfruit. Beer has a solid malt backbone, quite a bit of caramel sweetness but with a firm bitter base and a great American hop character. Fabulous big malty hoppy IPA, clean, tasty and bloody drinkable. Leaning toward the "big malt to balance the big hop" end of the scale as opposed to the bone dry golden light IPA, but having said that still pretty dry in the finish and clean as a whistle. Fabulous beer. Cheers Garrick. Legendary.

Had this a few nights ago, so hopefully my notes serve me...

Pours a beautiful burnished chestnut colour, but that's kind of irrelevant because man this is so all about the hops. Fantastic fruity hoppy aroma, which on the palate translate as resinous, fruity goodness. Very nicely balanced, great firm bitterness with a really solid malt backbone.

I'd very easily/happily drink a lot more of this. Magic stuff, thanks Studio.
Pours very clear, good head which last with nice lacing all the way down the glass. Great hoppy aroma. Firm hop bitterness with toffee flavours coming through also. Very hoppy burps after this! Very drinkable for such a strong beer. Would prefer a little more sweetness to balance it all out but a great beer none the less. Great stuff, cheers.
