Its the clone beer for WBC competition next month so there might be a few recipes around in about 5-6 weeks time, or come out to the competition and sample the entries..

Hey,

I'm doing a clear out of my hop box from the fridge and want to do an IPA with what I've got. 

Can I get advice on a worthy grain bill and some suggestions on hop additions? I'm a BIAB brewer and I think I'll go for a small 10-15L batch for this brew so could probably make it a DIPA.

These are the hops I've got to work with:

15g UK Goldings- 6.4% AA

40g Pacifica- 5.3% AA

40g Pacific Jade- 13.5% AA

40g Nelson Sauvin- 12.1% AA

50g Centennial- 9.7% AA

I've got a nice US05 yeast cake on stand by so I can afford to make this a strong one.

Hallertau Maximus is a great beer with a simple grain bill,  you could leave the goldings out use the pac jad and NS for early  bittering and flavour and hop burst the pacifica/centennial/remaining NS in the last 15 mins, you have plenty of great flavour hops.

Thinking of brewing a red pale ale and I have some Simcoe, Amarillo and centennial hops. Any thoughts on a malt base for this and hop ratios.

Red pale ale or an amber?
I have a nice amber recipe I'll put up shortly when I get home.
Amber would be great just trying to transits ion into a richer malt profile for the cooler months. Love my IPAs but just wanting to enrich things now.

The LD1 is a special hop mix of my own.

You could use all the hops u have in something similar use the cent as bittering and in place of the cascade. Then use your Simcoe and Amarillo in place of the LD 1
