Thought it might be handy to have a thread for some of the more advanced brewers to give some advice on recipes.

Let's see how it goes eh...

Wanting to brew something light and easy drinking for summer that still has a good amount of flavour, sort of like a "session IPA" but maybe not quite as intense as semi-conductor so my non-hophead friends might enjoy it too. Thinking of doing two of these, one with Amarillo one with Citra, and if I'm happy with the base then maybe more as I've still got plenty of simcoe and cascade in the freezer too. I got the recipe of homebrewtalk while searching fo "Amarillo Blonde" and it seemed to be getting a fair bit of good feedback, I've bumped up the late additions as I don't want it to be too "lawnmower" but probably won't dry hop it. Here's the thread with the original recipe and peoples variations; http://www.homebrewtalk.com/f62/amarillo-blonde-313901/

1.050 OG, 1.015 FG

26IBU, 5SRM, 4.6%ABV

12 litre batch, 68% efficiency

2.4kg Pale Ale malt

250g Caramel 10L

250g Vienna

6g Pacific Jade 13.1% @60

12g Amarillo 8.2% @10

20g Amarillo @0 and steep for 15min before cooling

or

5g Pacific Jade 13.1% @60

10g Citra 13.5% @10

20g Citra @0 and steep for 15min before cooling

I thought about trying this imperial ipa recipe from here: http://beersmithrecipes.com/viewrecipe/172160/pliny-the-step-child

but instead use NZ hops. Cascade instead of centennial, nelson sauvin instead of columbus and southern cross instead of simcoe. Would they be alright or are there better options?

Looking at around 8.7%abv+

columbus seems to give a mellow  bitternes vs IMHO southern cross which I find sharp.

I think this beer would be far too bitter.... lets see what others think.   Why the DME ?  I would keep a $20 bag of dme for starters etc and just bulk up the grain bill if you want more alcohol ?

Have you looked at the original pliny articles/recipes from Vinnie Hayden? I've tried to brew the original once and didn't follow the instructions too closely :p Mashed too high and got a higher OG - ended up with a super sweet cloying monster of a beer :p Generally people will say IIPAs need to be very dry which is not that easy when you have a higher OG. This recipe has a lot of crystal in it and you're going with a higher OG than RR, I would cut most of that crystal and sub out some of your extract with sugar. Make sure you pitch lots of healthy yeast and give it plenty of O2 and mash low and long.

Can't really comment on the hop subs - good luck and let us know how it goes :)

Afternoon all. I normally supply a clone kit, details are here and it has a link to the original Elder recipe. I've brewed this a couple of times and it's a massive beer but I've not had the original. However US hops are in short supply until the New Year.

Croucher Lowrider

Anyone got any ideas?  whats in this?

Peter. I had a gander at the website/blog and it looks like it's the ANZUS IPA. If u read the blog it give u the hops.
I have an American wheat ready to be racked on to some feijoa pulp. My question is how much feijoa would be recommended for around 20L? Anyone got experience using feijoa??
Sorry Paul can't help u there

But speaking of American wheats. Does anyone have an idea what hops are in haywired?
Yes, i'm winging it. I have put 2L of feijoa sludge with a crushed campden tablet. I will rack the beer on to it tonight after it has had 24hrs.

Well just to update the Feijoa wheat is tasting pretty damn well after a week in the bottle. There wasn't any advice on this so I figure not many people have experimented with feijoa so just thought I would rundown what I did so that other people can use it as a basis.

I basically did the Apricot wheat recipe from BCS. I had 3kg of feijoa pulp in the freezer. I thawed this out and mashed it up so that it was just a gloop. I then added a crushed campden tablet to kill any bugs. I left this for 24 hrs then transferred to a glass carboy so that it filled up to 2 L. I racked the beer on to it to get a final vol of 18.5L.

After a week in the bottle it has an evident but def not overpowering aroma of feijoa. The taste is a nice crisp wheat complimented by the fruit. Very refreshing and flavoursome. Only downside is that it isn't the prettiest. Has a murky look to it rather than a hazy appearance of a typical wheat. I look forward to critical feedback from the Christchurch case Swap.

I had beer left over which was racked on to frozen strawberry and blackberrys. This looked a lot nicer but will see when I taste it.

Just thought I would fill everyone in. Cheers

Gidday,

I am looking at using some 'leftover' Pacific Jade hops (25gms) early on in the boil in my next brew along with some Summit hops (50-100gms). Will I get any nasty (or interesting) results if I do this? I'll be adding Cascade later on and also dry-hopping with Cascade after a week. Any advice or suggestions appreciated.
