IDEALLY IN THE FERMENTING WORT.

But seeing as beer is acidic, you will need some kind of thermowell. I stick my probe onto the side of the plastic fermenter with some tape.

I do the same as barry, I used to also insulate the outside of the probe with a cloth to reduce the outside influence but don't even do that anymore. From listening to the brew strong radio show on the brewing network thats all those guys do. IMO poking more stuff in my beer increases the risk of infection / one more thing to sterilise etc for minimal gain.

Does it really make a difference?

I have mine tied to one of the rails on the door of my fermentation fridge. I have just assumed that after the first few hours (while bringing cooled wart to optimal fermentation temp or kegged beer to optimal drinking temp) the whole thing would be pretty stable. The high density beer is basically a large thermal mass and any change in beer temp (due to fermentation) will change the low density air around it pretty quick and trigger the STC where ever the probe is.

It would be interesting to see a graph of temperature fluctuations in Wart vs Fermenter Wall vs edge of fridge.

Someone please correct me if I'm wrong and need to move my probe.

yes it does, i have had 2 carboys in same fridge   the one with the temp tapped to it was at 20 while the out of control ferment was at 27 and was too late by the time i found it.....

be wary 1084 yeast its a monster

please note this is for a keg fridge not a fermentation fridge. I have a separate fridge for that, which i tie the probe to the fermenter with some insulation around it to keep as cloe as i can.

Glass of water with a thermometer till I had my fridge setting dialed in. I don't have a stc on my kegorater.

I have a drink bottle filled with water which I put the probe into and then put that into the Keg fridge - If you have the room give that a go.

In a jar or bottle of water in the fridge - the water stops the fridge compressor cycling too much but still catches the temp changes due to the presence of a new keg in the fridge. Anything's going to be compromise though and it'll all settle down regardless after a couple of days...
