Looks like recipe time. Mine's an NZ Pale Ale.

This was a first for me with flowers + also wanted to see how it would come out with first hop addition @ 30

OG and IBU mate? Quite a bit of crystal in there for a PA, cant wait to try it!!

Another CS beer this afternoon (got through five with my brewing partners), and I'd been looking forward to this one.

Pours a golden amber without much of a head (although it still laces really nicely down the glass as the beer disappeared from under it). Looks nice and clear, especially as it warms a little. On the nose, very definite caramel/crystal along with juicy NZ hops.

Drinking it, it was just so easy - good balance between bitterness and sweet hops which left me wanting more. Very tasty burps.

Really, just a very well balanced beer that hit all the right buttons for me. Nice work Dale!

Pours amber with a 2 finger head which sticks around till the end leaving mega lacing on the glass! Slightly hazy. Tropical fruit and toffee malt on the nose with hints of ripe strawberrys, quite a creamy mouthfeel, nice co2 levels before its swallowed into a candy like bitter-sweet finish with more tropical notes. Good use of NZ hops, cheers mate!

First beer of the case for me, what a way to start.

Awesome drinkable pale ale.
Pours a slightly hazy light copper colour, pillowy off-white head that stays to the bottom of the glass (seriously, that shit is sticky).
Lovely floral slightly spicy nose with some caramel notes coming through.
Beer is slightly sweet at first sip, but that is soon cleansed by a bitterness that seems to have a slight delay, teasing.
Little bit fuller bodied, not super dry, but that's really what I needed on what's been quite a cold day.
I'm loving this Dale, it's really well brewed and super tasty. Tangy, spicy, bittersweet. Not outrageous in your face, just really nicely balanced. I could drink gallons. Really great effort.
Thanks for that great feedback Barry. I must admit I was gutted when the keg ran out a glass after filling up the CS bottles.
Just finished the pint. Good match with dinner - home made pizza. Wish I had another :(
I was lucky enough to get a few "extras" from Simon. He would hvae been well within his rights to take these as a perk of the job but I guess I just got lucky. I owe him a few...

Dale's NZPA - At first I got a little honey or candy note that made me think there was a base of Gladfield malt in this beer. I had te first glass with a homemade salmon, carrot, green pepper satay stir fry... it was pretty hot and the beer was an excellent match. Then I picked a little diacetyl on the second glass, just a little mind... but it does competes with the hop aroma on the nose and flavour in the mouth... however there's this great overwhelming tropical juice hop flavour, bolshy bitterness and a almighty great whack of grapefruit on the palate just after swallowing. This all makes up for a fermentation that was only 99% right.

Fantastic recipe, exceedingly well balanced, and great malt/hop combo. Very nice beer that would be perfect with an infallible fermentation. What's the history of the yeast?

Every beer I drink is to be matched with some of my favourites from a CD Bambule gave me earlier this year. This one has the anthemic qualities of The Waterboys and Simple Minds but has the guts and energy of The Replacements:

Thanks very much Stu, this yeast was Gen 2 pitched from slurry. Normally I make a starter with the slurry and don't pitch direct.
That might be it... just not quite as healthy as if you'd reconditioned it.

Bloody good beer though Dale.
