Starting a brew and generally aim for 5% beers..I am making my first "Joking" IPA that you can clean your teeth with and am aiming for approx 6.5%/ 7%...Should I be using 1 or 2 packs of US 05 (DRY) given the OG will be a fair bit higher?

Mr Malty says 13 grams.... based on 5.25 US gallons @ 1.065 OG.
So it would be two then given each pack is 11.5 gramms and the OG is approx 1.072???
Yeah I brew these week in week out in fact im brewing a Black IPA right now!! I allways for 23L Pitch about a pack and a half with 23L of 1.075, with the other half I just through it out it a bit wastefull but its all in the name of good beer!!
I just Pitched one pack for 20L of 1.067 - the reults are still to be seen... but the F.G is about 1.013 (currently on D rest with dry hops). Preliminary results in terms of aroma are very very clean. No sulphur, acetyldehyde or diacetyl.. just a soft fruityness coming through (amongst all the hops) that is quite complementary.

I gave the brew quite a lot of aeration and servomyces, so I think that those 2 factors were very helpful in this instance.
