well, i bottled the first batch of unspeakable last night...couldn't help myself and am now into my 2nd bottle tonight...its delicious! even flat. as for today's attempt.....the crystal from hauraki homebrew is soo dark its made the beer much darker (grr). Upped the IBUs to around 65. I also didn't use hops bags and now have a good 3 inches of sediment in my fermenter....hope this turns out ok - may have to rack off to a secondary?

brewings going well. Got an ordinary bitter on the go at the mo, and two variations of the unspeakable in fermeters. Have a tempmate arriving along with some Wyeast (Timothy Taylor ale) in the next day or so, so that will be my next brew. What do I need to do for the case swap? Provide a couple of bottles? Should meet up at Galbraiths when the yeastie boys arrives...

Hey, have you wired up your tempmate yet? I got mine yesterday...was thinking of taking it up to an elecrtical repair shop and asking them to do it. Was also going to connect 2 x female power points to it rather than hardwiring in the fridge and heat pad.....that way I can upgrade fridge etc in the future.

yeah some PH5.2 for stabilising the mash and some 1469 Yeast - supposedly the Tim Taylor Landlord strain. Just created a big starter for this in a 1 gallon carboy.....hope to get a couple of brews out of it....have you had any success reusing yeast or pitching onto the yeast cake?

12 bottles for the homebrew comp cost me $16 - and they were glass so much heavier. Shouldn't be too much. I'll give you some cash, probably be Wednesday night OK? just have to check with my wife what night works out best.

Keep meaning to organise a Shore brewers get-together but been too busy with overseas visitors. I'll definitely do something soon. I have a decent outdoor entertaining area and bar, so I'm happy to host.

first ones sitting in secondary..gonna leave it there for at least another week. tastes great but a little sweet still. The second has only been down since Tuesday. Just cracked a few bottles on that pale ale that I upped the hops in as I cooked the grain (marris otter) a little high. Come out a fair bit darker but tastes lovely.

had a call from my sparky - he's wired up my tempmate for $60 - although I supplied about $25 worth of parts. Got the female plugs in the end - will post some pics up when I pick it up.

how are your 1469 brews coming along? I've had 4 out of it now, with 3 jars of yeast left in the fridge. i like the idea of getting some test tubes going from an initial smack pack. thinking i need another temp controller as i can only fit one fermenter in the fridge!
