I thought I better post this, because it's a bottle conditioned number, and I only bottled it two days ago (7th of April).... Best to not open it till it feels carbed. Could probably deal with a week in the fridge too (upright) if ya wanna be a real pedant.

Size: 6.0 gal

Original Gravity: 1.074
Bitterness: 74.1 (35.0 - 75.0)

Ingredients:
7 kg NZ 2-row (I think I saw Mike using malt from the "NZ Pilsner" bucket.
.35 kg Chocolate Malt
350 g Crystal 75
.45 kg Roast Barley
33.0 g Warrior (16.0%) - added during boil, boiled 60.0 min
26.0 g Centennial (10.0%) - added during boil, boiled 5 min

ferment at 19degrees with 2nd gen US05.

I'm liking the look of those IBUs and the Centennial to finish with on this one Stu.  I've been looking for a winter stout to brew and was considering this very recipe so keen to give yours a crack first.  Cheers

Yep too right!  I'll going to have to hold myself back from cracking the bottle too early though! 
This looks pretty good, I,m going to TRY and hold off on this one until at least May. I think Stouts just need a little time to mellow out, My Smoked Stout included.

Second beer tonight for me. Again, I've not read any of the notes.

 

Pours black as night with a lovely beige head. Carbonation seems fine, at the lower end but that's OK. I'm picking up a slight phenolic (band-aid) note in the aroma. Not something I'm used to with Centennial, so I suspect it could be fermentation-related.

 

Body is good, rich and smooth without being heavy. Good level of bitterness but maybe a slight vegetal note towards the end. Perfectly drinkable, thanks Stu!

This is my nightcap tonight and I,m enjoying it.

Appearance - Deep, dank, dark, black. Small head but it lasts which is great

Aroma - Roasted, Coffee, a little nutty and I,m getting that phenolic/ethyl acetate aroma Martin mentioned but I did pick it up before I read Martins comments. Not really prominent so I wouldn't worry. I brewed a stout the same time you posted that you brew this and mine has the same character. Must have been the heat.

Taste - Roasted, coffee and lovely smooth body with a pretty hefty afterbitterness but its great

 

Overall - Bitterness is right up on my limit but I,m loving the taste and warming feeling you get from a good stout


Very nice beer. Came across like black malt to me... giving it more of a "Porter" feel than a "Stout". Now that I've seen the recipe I'm guessing the chocolate malt just edged out the roast barley. About 1/3 of the way into this I was just thinking it was ok, nothing special. But the bitterness and malt astringency grew, and then the hops really started to show through very nicely. Perhaps even a little fruit from the ferment.  I ended up feeling disappointed when I finished it.

I didn't pick any phenolics but I'd just had a Rex Attitude, so I guess you could have put in a few drops of iodophor and I'd not have picked it up.

Very very drinkable. If I had more on me I would have had another couple of pints, no problems...  Cheers!

I'd recommend people drink now, there is no reason to wait.

This must have been around 7.5%... no wonder I wonder I was so disappointed when I finished it.

No wonder I felt like I'd been hit by a bus the next morning!

I can't claim any credit for the recipe though, it's all Jamil. I just tried to follow the instructions the best I could!

This reminded me a bit of Renaissance Elemental porter, which is a compliment in my book! Poured pitch black with a relatively low level  of carbonation which suited it just fine.  Not much on the nose for me but I think I drank it too cold.  Rich chocolate/coffee flavours,  smooth as silk with a fairly assertive bitterness on the finish.
