Hey folks, I haven't tried Kohatu yet and I know the common sense approach is to make a single hop pale ale, but I have some 3522 Ardennes sitting in the fridge ready to go. I'm planning an IPA with Motueka, Kohatu and NZ Cascade. 1.055, mash high to combat the insane attenuation, 40 IBUs, lots of late hop additions. What do you think?

Just my 2c, I have found that I dont like most Beglain IPA's. IT seems that the belgian esters dont gel particulaly well with american style hops (whether grown here or elsewhere). I have has some much better ones that had more of a noble hop thing going. 

Let us know what you think when you've done it though. 40IBU's is the very lower limit of IPA, so it may not be too much of an issue.  

Yep, I know what you mean. The 3522 is the La Chouffe strain and seems to go better with hops, but I still plan to ferment low to keep the yeast character restrained. My thought was that the noble hop character from the Motueka  will go well, and the Cascade will be okay if I use a bit less than the others, but the Kohatu is an unknown quantity.

Who was it that described Kohatu as being "like sweaty pineapple that's been down your pants"?    

haha not too sure about the sweaty pineapple in the pants (also ow), but it has a lot of that piny stuff, which i really dont like in belgian IPA's. Up to you of course :)

Well, I had a taste from the fermenter after 3 days and it's incredible- in a good way. In the end I dropped the IBUs to 35, which I suppose makes it more of an APA ("A" standing for Antwerp of course). I also dumped the NZ Cascade and used some Riwaka I'd forgotten I had.
It's over halfway fermented, so the real test will be if the very dry mouthfeel from the 3522 makes the hops unpleasantly stark, but at this stage the fruitiness from the Motueka, Kohatu and Riwaka perfectly complements the yeast. Result!

Sorry to resurrect an old thread but I have just got 100g of Kohatu  and was wondering if I should do a Gladfield's pale ale smash with it or do a mash up....  I have Riwaka,  no Motueka but have others ...

Did you take tasting notes?  if so I don' t have 3522...
