Brilliant Paul, will check out the water in a glass trick then, it sounds good. 

Im interested in the STC-1000, so will just get that and find a nice probe.

I have also ordered one of these Resistance thermometer NTC 10K Sensor to see how they measure up, but it hasn't arrived yet.

Just a quick retarded question but, i'm about to buy one and just want to confirm it is the 220V one that i want for NZ??

sure is 220v, but make sure you get one that can handle the right amps, without the need for an extra relay. I make them up and currently have one on trade me ready to go. http://www.trademe.co.nz/Browse/Listing.aspx?id=413117474
