Tried a 98 mm bar in the 5lt jobbie last night, slowest rpm it was jumping around like an epileptic rap dancer.
tried the 48 mm bar, perfect, vortex to the bottom of the flask.

Sounds like the magnetic field is either too small or too weak for the 98mm stirbar.

If the stirplate is homemade I would increase the distance between the magnets to see if that helps.
I had a full 5lt's in it, only water so the viscosity of wort may change things a little.
My stirrer is a brand name I don't remember, 2nd hand unit from dairy farmers I think it was.
I think you're right about the field being too weak, the 30mm bar spins like crazy.
Got screwdriver? LOL

Maybe worth taking a look inside it.... :)
