Brewing this up either tomorrow or Sat.

A recipe similar to this was my first IPA I ever brewed so I'm hoping I'll be as impressed with this one as I was the original three years ago.

Looks good Phil. What are you substituting for Victory malt in the Evil Twin recipe?
Trying biscuit. Not sure if it will work, but first time brewing this recipe, so wont have anything to compare it to.
Am really tempted to dry hop on top of things, but this was part of jamils article on massive late hopping, and Im thinking that if I really want to know what that tastes like as a method, i better stick to the written recipe the first time. Of course you never know....
I gather that Victory and CaraAmber are just proprietary names each company has for their own biscuit?
I'm planning to make that recipe myself too, after I make the Epic clone next weekend. Let us know how it turns out.
Boys... Those names are definately proprietary: CaraAmber = Weyermann and Victory = Briess.

We'll never see briess malts in NZ in the immediate term... and there are some substitutions you can make with malt available in NZ. There was a discussion on it a while back where CaraAmber was assumed to be the best substitute for Biscuit however since I started stocking buscuit - the differences were like black and white.

CaraAmber is just a crystal malt - it gives an Amber colour to the wort (hence the name). It's no different in production to CaraRed, CaraMunich etc... Don't get the "Amber" part of the name mixed up with any pre conceptions as related to UK amber malt.

Infact - UK Amber malt is a better substitute for Buscuit malt than CaraAmber...

So - what's the best available substitute for Victory in NZ? Either Biscuit from Dingemans or UK Amber if you can find that.

After a wee break from brewing I decided to brew another beer, she's almost ready to be boiled. The last beer I was involved in brewing was the Coconut Porter at Hallertau almost 5 months ago!!!

This beer is a twist on my favourite Pale Ale B-Sharp. In this recipe I have increased the specialty malts a little to provide more body and some additional complexity and depth to the flavour that I thought the previous version lacked a little.
I have also broken my "two flavour hops only" rule by introducing a third flavour hop. I've tried the Styrian/Riwaka and Styrian/Motueka combos and liked them equally, this time its Styrian/Riwaka/Motueka.

It should be ready just in time to ship a couple of bottles off to the Tron for the NHC to support the event and get some expert feedback.

Good to hear you're back on the horse Mr C! And that certainly looks like a tasty little number.
I know lag times are not necessarily a good indication of yeast health or anything but this beer was bubbling away within 6 hours of pitching. Shortest lag time ever for me.
