Straight out of the fermenter at kegging time. Same wort as the photo "Belgian Pale - WLP550" but fermented with the Chimay strain. This beer is well attenuated and has banana and spice on the nose. Pretty F'ugly.

I found I had the same problem with wyeast 1388 - but my attenuation was crap. Made for a difficult keg to get through.

Attenuation on this one is significantly more than '550'. I'm not surprised as La Chouffe has plenty of residual sweetness. It's clearing up now after a week in the cellar and a week in the fridge... it won't be brilliantly clear but as long as it isn'tmuddy I'm happy.
