A recipe that has sort of evolved on me. Started off very heavy on the Citra, (so recipe was then the 4C's) this version has been my first Mosaic experiment.

Pretty much as below, no water additions, north shore water, whatever that may be.

The Aroma hops were done as:

Centennial and Mosaic at flame out.

Immersion chiller went on for a couple of mins, temp down to 80c, then turned water off, and left pump running.

threw in 35g cascade, (1.5g/l) and left pump running. 15 min later was at around 75C, and turned the water back on for the chiller, and cooled rapidly to 23C for pitching an active 1272 starter, 3rd generation i think. Ferm fridge set to 18.5C.

Racked to secondary day 6, early, but i like to do it when there's plenty of CO2 still around.

Threw in the 1st two lines of dry hops then.

Day 12 cold crash, turned the temp down for the ferm fridge to max cold, although it only gets to about 5C, and threw in last line of dry hops. Bottled day 16 with a heaped teaspoon sugar per 750mls.

That was saturday of labour weekend, so its pretty fresh.

First cab of the rank for me as I ended up with 3 bottles of this one.

Appearance Slightly hazy golden amber, good head and plenty of life

Aroma Big hop aroma when pouring, almost made me think it had a green tinge!  Piney, sherbet, grapefruit...?  hard to pin down, slightly 'sharp'.

Flavour Initial hint of wheat/sourness.  Good pale ale malt background, long and full piney/grassy hop flavour.  Strong bitterness.

Overall At least I picked it as American before reading the recipe (don't know where I got the wheatiness from though)!  But I found it hard to distinguish the hop flavours other than a general 'big hoppiness', the solid bitterness would go well on a handpump.  It may benefit from more simplicity in the hop bill but was certainly very drinkable and I look forward to the development of the next two bottles.

Second bottle:

Again looks good, big head. 

Piney/spicy aroma, slightly sweaty.

Full honey malt, good bitterness.  Loaded with fine hop character - not too heavy.

Overall an awesome beer.  Lovely to be drinking on a hot day without 'overthinking' it like the first bottle.  Very happy to have one more to go!

Third bottle!

This one was over-carbed - extended conditioning or difference between bottles.

Softened the hops but made it harder drinking.

Appearance  hazy/cloudy  amber, not much head, may be my fault for not opening earlier the cap didnt seem super tight which had me worried.

Aroma Hadn't read the recipe, instantly thinking big us IPA from aroma.  not much carbonation I was looking worried.

Flavour Solid ale maltiness with no single malt tone dominating.  Big US hops present,  I had solid grapefruit (from centinial I guess now) with a lingering bitterness that lasts till the end.  Slight pine taste I was guessing citra/cascade

Overall The carb was low but was there, I think maybe the bottle was not well sealed.  I liked this beer, it reminds me a bit of the monsoon IPA at deep creek brewing.   I haven't checked if I have any more of these but I hope I do.   Its very sessionable easy drinking IPA  nice work.  

A - murky amber. Good head, good carb.

A - Orange sherbet? Is the secret ingredient orange sherbet dosed with pine needles? Mandarin-sweet. Nectarine. 

F - Nice level of bitterness, good rounded mouthfeel. Not much of a finish or hop flavour, it kinda falls off after the big aroma - Reading the recipe I would expect more hop character than what's in the glass. maybe move some of the hops back towards 15 min a little? or have a hop steep in your chill?

O - the beer is kinda divided between aroma and bitterness - the flavour is quite subdued compared with everything else. Overall, good beer, favorite of the swap so far. I I'd probably look at the malt bill if you rebrew - I'dconsider ditching either the crystal 30 or caramalt in favour of something with a bit more character - munich or a lesser amount of slightly darker crystal depending on which way you want to go.

I like it, nice drinkable beer. I'd be happy if I had a keg of it!

Late to the party I know - just drank my first one of these today. I certainly wasn't disappointed! I don't think I can really add more than what has already been described, apart from I'd never wittingly drunk a beer hopped with Mosaic before, and now I'm keen to go back!

THankfully found this one in my to drink stash just when I felt like a hoppy pale.  Murky light brown, with a large spritzy head. A tad overcarbed so I left it for a few minutes to degas.  Almost puckeringly dry and big bitterness it has aroma in bundles too, but less flavour than I'd expect.  A bit unbalanced for mytastes but tasty nonetheless.  For my mind I'd drop the bitternes by 5-10 IBUs mash higher and include some more maltiness, poss even try a lower attenuating yeast.  Cheers.
