I can't directly answer your question  but Gladfields produce an A3 sheet describing their malts but the thing that I found useful is they provide substitution guides of specialty malts from competitors.  e.g Special B is something like Dark 1:1 plus 10%(?) of Shepard

I've used Gladfields crystal malts as a straight substitute for British ones with good results, my palette may not be as refined as yours though so take this as my opinion rather than as fact. If you email them, Gladfields will send you a substitution guide for all their malts.
