Okay folks, I've never brewed a Belgian ale before, so I'm okay with this one not hitting the mark!

I personally find it too sweet - though I REALLY don't have a sweet tooth at all. I'd serve it really darn cold.

4.8 kg Weyermann Pilsner Malt

.5 kg Munich TYPE I

0.2 kg Aromatic Malt

0.2 kg Caramunich® TYPE III

0.2 kg Special B Malt

0.30 kg Candi Sugar Dark (couldn't find dark syrup)

41.25 g Tettnanger (4.8%) - 60.0 m

0.500 kg Golden Promise Malt (ran out of Pils)

2.2 g Wyeast Nutrient - 15.0 m

0.5 g Whirlfloc Tablets - 15.0 m

Ferment @ 18 through to 21 w/ White Labs WLP545 Belgian Strong Ale

Ah wow, I've been running around like a headless chook the last week while and haven't come back to check this! I'm glad you guys seem to like the beer! I personally I'm still be given a Belgian style beer that really makes excited, but hey, fun to brew!

Pours a beautiful chestnut colour with an off-white head that doesn't hang around. Slight haze, but that could be my dodgy pour. Aroma has whiffs of treacle and an unmistakeable Belgian-ness.

I don't think this is too sweet at all - it finishes nicely dry. Nice fruitiness with hints of raisin. Possibly a little thin in the body but overall this goes down very well. Only other thing I'd try and fix is a slight solventy note, almost like some hot alcohols although the fermentation temps look fine.

I had this a while ago whilst watching movies with some folks and was slack with getting any notes down I'm sorry. I didn't pick any faults though and I remember thinking how close it was to my version of the same recipe. I used Wy3787 in mine though, and it finished a point higher at 1.009. I think we have similar taste in Belgians re the sweetness, I've been struggling through my version for that reason. I don't remember having the same issue when Ive had commercial versions of dubbels..perhaps they run the IBUs up a little higher? I'm not sure.

Anyway this was a well made beer all the same, thanks for sharing !
