Brewed a Belgian Blond last weekend. Mixture of german and nz pils and a bit of aromatic.  Simple as pie. Wyeast 1214 is freakin machine. Keeps surprising me. I find it takes a while to settle out though and has a distinct taste to it. 

Last night i brewed an oatmeal stout (marris otter as the base) and split it.  Half is being fermented with safale 04, half with belgian (cause....why not?)

You know those brew days where everything goes exactly to plan.. no suprises.. no stress.. That's today for me! :D 

This robust porter is boiling away as I type:

Brewing a clone of Epic Pale Ale today. For a laugh I thought I'd ferment half the batch on french oak chips, too see what they impart to the flavour. Could be a mess, who knows?

What's become a bit of a pleasurable habit when you only have a couple of kilos of malt left in the sack along with a handful of other grains that needed using.  Mild Ale

Bittered to 18ibu with Bramling Cross.

S04- I struggle to recall a decent beer I've made with this yeast. But maybe if I give it one more shot...

Luck has nothing to do with it. Its recipe, technique and individual taste.

Never had any problems with S04... guess I've just been lucky.

I just find it kind of destroys my hops. I do not hate the yeast, but find others much more pleasing.

Never had any problems either, it's always been reliable.... Just not mad on the character it imparts.

Try fermenting at 15C. I had a couple of good bitters from second generation S-04, fermented cold at the advice of Coop from Wigram Brewery. It still doesn't compare to the liquid strains, but the esters are much less dominant at that temp.      

Thats a fair point. I never went below 18c with S04. I did have one stout that I enjoyed that I used S04 to make. However, in general, its not my go to yeast.

Too each his own. That is one reason to brew your own beer, you get to choose how you like it!
