Hey mate, all good.. Maybe next weekend?

Ive got an awesome APA recipe for BIAB, "Unspeakable Pale Ale" its very popular amongst non beer drinkers as well, so an all round winner!

Here ya go...
20 litre batch

4kg Golden Promise
200g Crystal

60 mins : 30g Cascade
30 mins : 18g Nelson Sauvin
15 mins : 25g Williamette
5 mins : 10g Nelson Sauvin, 15g Amarillo
Flame out : 15g Amarillo

US-05 yeast

Mashed in at about 66-67

Hey buddy

Dont use EKG or Stickelbract, unfortunately this will be a bit lacking without the Amarillo, it really makes it... But you will need at least cascade and Nelson Sauvin... I think the EKG and Stickelbract wont give you an APA type aroma/flavour...

And by US-04, do you mean S-04 in the blue packet? If thats what you mean definately dont use it for an APA, its more for english ales cos it can give off stinky fruity esters... It would be worth it to get a packet of US-05 cos its such a clean fermenter and will make the malt and hops stand out awesomely...

Sorry, just reaslised you asked what initial watervolume you should have... It can be quite hard to know how much you will vap off untill youve done a boil... But in saying that, I have a 30 litre pot, and to do 20 litre batches I can put 28 litres and 4.2kg of grain, then after the boil that leaves me with about 20 litres give or take...

So Id start out with maybe 35, see how you go, if you boil off more you can top it up in the fermenter to 25 litres...

Hey mate, did you manage to get any Amarillo? Did Mike have much left if you did?

Howd it go in the end?

Wicked stuff mate! What hop schedule did you go for in the end?
At 11:27am on October 14, 2008, Reviled said…
Thats a good OG mate, it will work well with all of those IBUs... Be warned, leave it about 2-4 weeks in the bottle before you try it or it will be super bitter! And I personally wouldnt dry hop the APA, it has plenty of hop aroma and might make it taste a bit "green"...

In regards to your hops, I would probably do another APA or Golden Ale using the APA hops and just play around with the additions...

Cant help you with the stickelbract cos I havnt used them yet, but EKG is an awesome hop for english beers!

1014's a good FG, what was your OG again? Glad youre liking the taste of it, I only have one bottle left so should really do another one soon, its a fantastic beer :o)

Um, what sort of recipe's do you want? Have you tried a smoked beer? I have a fairly good Smoked Porter recipe!

Nice, 5.5% is all good :o) Will have a nice malt backbone for all of those hops...

Ill drag out my smoked porter recipe in the weekend and give it to ya, Mike at brewers coop has some smoked malt, or at least he did, its not very popular so he prolly still does...
I normally do a 90 min mash, but ive only ever done one 90 min boil, normally just 60 min boils...

The thing with mashing is most of the conversion is done in the first 20 mins, ive done a 60 min mash, but my efficiency was down... So its up to you, but with a shorter boil it wont affect your efficiency...

Gla you like it mate, its definately a cracker, my first batch didnt last very long... It should still be ok with the darker crystal? Let me know... I did a tweaked version in the weekend and used carahell, its turned out far lighter, but should still be tasty...

I never use hop socks and allways get hop trub in the fermenter, its fine, you can rack off if you want, but if not, just bottle it and what small amount gets through will settle out in the bottle along with the yeast...

Hows the brewing going mate? Not sure if youre keen, but you came on the site a bit late, however, if you wanted to join the case swap we have near the end of this month with the guys in chch, youre more than welcome... Im gonna bump the thread so if youre keen sing out...

Wicked mate sounds like youre brewing up a storm!!! Awesome :o)

Definately keen to meet up when the Yeastie boys arrive! Im so dying to taste it aye!

With the case swap, it would be fairly simple, just supply a few 750ml PET bottles, theres 5 of us including me at the mo, so if you join there will be 6 of us, 3 in akl and 3 in chch... Were doing two brews each, but Barrys only doing one, so if you just want to join in with one brew, youd need 5 750ml bottles, then about a week later, youll get 5 750ml bottles back of various beers!!! Let me know if youre keen and update the thread...

Cheers

haha, crazy coincidence, I got some 1469 with all my kegging gear, I split the pack into two 1 litre starters and split one off into 3 300ml bottles with some water for storage and pitched the other one, I plan to get about 6 batches at least out of the one smack pack, just to make it cheaper, but man, the smell of the starters is just awesome, I dont have an airlock on my starter bottles so every time I cracked the lid to get the Co2 out I got a big yeasty toffee smell, fantastic!!! :o)

I pitched the 1 litre starter into an Altbier yesterday morning, by the time I got home from work there was allready an inch thick krausen!!!

hey mate, was good to catch up last night...

Found this on the site this morning... Yeastie Boys Pot Kettle Black

79% Maris Otter
10% Munich II
4.5% Crystal 55L
3% Pale Chocolate
2% Chocolate
1.5% Black Patent

67c mash. 60min boil to around 1.060 - and a massive US Cascade-fest to about 55ibu (dry hopped with them too). US-05.

It's a very slight tweak on the American "Stout" I brewed last year (that had a mix of black malt and roast barley).
