will work something out with the hops, I have cascade, Sauvin (i think), EKG & Stricklebract. Only have US-04 yeastwise.

What do you think my initial water volume should be if I'm aiming for 25L?
So I heat the water to strike temp. 90mins at 66-67. Then mash out to 75 and boil for 90?

Built an immersion chiller last night. 15m of copper coil 3/8in cost $80 trade through a mate. nice.

oh yeah - do you put your hops in bags or throw the pellets straight in? Any trick to not getting too much trub in the fermenter? ( I'll be doing the pour in method as I dont have a hose).

I'd also bank on having to get new seal kits for both of your kegs, get as much as you can from craftbrewer and try not to forget anything - you'd have to pay for shipping again (I've done exactly that - sucks your budget up real fast)

I chose MFL fittings for the gas in, believe me it's so much easier those things being john guest! Stretching/pushing beer line over barbs is a major pain in the arse.

yeah I got everything ok. From memory he might have been low??? I'm planning to go in over the next day or so - so will find out. Planning to bottle my first batch on Friday (ill have been 2 weeks in the fermenter and is starting to taste great). The pale ale went well too.

Went for the schedule you suggested - upscaled for 25L. Ended up with OG of 1.052 and 23L - may be a bit on the strong side I guess. Wondering what to do next. I have a load of hops sitting aroung - those from the APA plus Sticklebract & EKG. I'm thinking of a single malt, single hops brew. Any suggestions? I have some 1 gallon glass carboys I inherited too...was thinking of bottling up some of first brew and putting a gallon into one of the fermenters to dry hop for a few weeks....any benefit here?
Off to waiheke for a wedding this weekend. Going fishing on thurs day for the stag in my boat - hopefully the snapper are turning up about now.

Still thinking about yeast. We have an account with White Labs but to bring in one vial is US$100 just for shipping, so obviously you'd need to bring in a fair amount to make it viable. We've had a few things on so haven't officially "launched" yet (we're selling grain to homerewers we know in Wellington but my post here was the first public notice of our existence). Will keep you posted.

That's fine. Good question. If I could bring it in and sell them for $15 I'd do it today but it looks more like double that. You can buy 3 or 4 from morebeer and have them shipped here for about $20 each.
If you are looking for liquid yeast, the best option in NZ is to buy from Nicholford - http://www.homebrewer.co.nz/wyeast0809.doc. It's not as cheap as buying it from one of the overseas homebrew sites but, most importantly, it will be lab fresh and very viable. You'll be getting it within a week of it coming out of the Wyeast lab in USA. From anywhere else it could be weeks or months older than that.

um, you'll just need some way to connect from beer line to chiller coil (stainless or copper pipe?) and from chiller coil to tap. No experience with either sorry :(

so he's out of male flare disconnects? for gas-in or beer-out?
I'd be tempted to wait, you could just as easily get the barb fittings, I just know from experience what a gigantic pain in the arse they are, takes quite some effort to get the beer line over the barb effectively, and you have to clamp it (clamp not included of course). with John Guest fittings, you screw the John Guest adapter onto the disconnect, then the beer line pushes on. yes, pushes. so quick and easy. thats why I recommend them.
but if you don't think you'll be moving your lines about or anything like that, by all means go to barbed fittings.
I remove gas lines and fart around all the time, for burbing newly kegged beer, force carbonating in a hurry, all that kind of thing.

you _could_ get a MFL for beer out, but the hose on the picnic tap won't fit it. you would have to then go MFL to beer line to picnic tap hose - and there's no standard fitting, I found a male-to-male fitting at a hydroponic shop that does the trick for me but I figured you probably wouldn't want such a shonky solution.
The picnic tap hose is pretty soft and rubbery, it will fit over the barb if you heat it with boiling water and push real hard ;)
thats why I suggest barb for that guy.

hey as an aside, I'm going to be in Aussie for the next few weeks so might not be able to get back to your questions right away. have fun.

nah mate, glad your excited. kegging is simply the best thing I've done after moving to all grain. enjoy every bit of it.

Hey mate, how do you go about reculturing? As I've come to the realisation that my Wyeast Smack-pack just won't be big enough to handle the Irish Red (possible case-swap!) we have sitting in the cube. I was thinking about getting a 2L flask from labwarehouse.co.nz.

No you don't need one. You just need to make sure that excise is paid. The licencing system is aimed at sales to the public and is quite a different kettle of fish.

No, excise tax is tax on how much alcohol you brew. It's one of many expenses. Plus GST. And then, if you've made any profit - which we haven't and won't be able to unless we grow considerably - you pay company income tax on that!

aggh, must have been too much sediment in the first pour - the second reading was better at around 1.014 All bottled up and tasting fantastic! plan another batch tomorrow to use up the hops but with 1kg uk pale malt and 4kg GP. Another other recipe suggestions?

OG was 1052. have never tried a smoked beer before. Do you always mash for 90min and boil for 90min? Was looking at where I could save a little time.
