Hi Steve - Not sure, it's meant to be quite dry so I'm not sure if the caramel notes from a reduction might be out of place. I've never tried it, but that doesn't mean it won't work! I usually sparge around 76-77. Don't want to go too high otherwise you'll extract tannins.
