Hi all, just wondering if anyone else had found this year's crop a bit odd. I use it in most of my NZ style beers for a bit of backbone but have found this year's crop quite spicy and even sulphurous…Continue

"Unless you're planning on cold crashing them for quite some time you don't really need to seal them up as with all the CO2 pumping out it'll be under a slight pressure all the time anyway. All you really need is something to stop crap…"

"Yeah that should be heaps, I think avoiding oxidation would be key to avoiding browning but not usually an issue if you're throwing them in for re-fermentation. I suppose the other thing is clarity, I used gelatin on my cherry berliner at…"

"Hey bro - blueberries do go nice and red in a sour - I've used them at a rate of 125g/l - I think I've got some kicking around at home - the flavour was a bit off but the colour should be there still if you want to take a look. Might also…"

"I bring it up to the boil, boil for five and then throw in my immersion chiller to bring it down to strike temp - with stirring the temp drop takes less than five minutes. I haven't actually noticed a difference - will have do do a side by side…"

Sam DT replied to nzbrewer's discussion What are you brewing?
"Yep that's the one - they still recommend oxygenation just after yeast pitch to the standard 8ppm (bottom of page 7). In theory if you have a large enough yeast pitch you shouldn't need to oxygenate but at standard commercial or home-brew…"

"Yeah I've got come K-meta from cider making but haven't taken the plunge just yet, Chch water is oxygenated tho so I figure a quick boil to knock it out of solution wouldn't be a bad idea. Oxygenation good, oxidation bad. You still…"

"Nice so around $5.50 per 100g depending on what you get, when ordering a couple of kg at a time (I averaged across Amarillo, Cascade and Citra) - that's not shabby at all plus guaranteed latest season. Not much fun for LHBS's tho, although…"

Hi guys,The NZHC crew are keen to run a bit of a club night event along side brewmania again this year.Basically the aim is to have six kegs from clubs around the country to be served on the Friday night before and after the competition. We'll be throwing in a Keg from Chch and they'll have some from Nelson but would be awesome to get a keg down from up your way.Kegs can either be brought down by a conference participant or we can try and tee something up on the shipping front.
