"Ouch. I'd be more worried about the temps the garage hit over those weeks. I dunno about yours but ours can get into the high 30s if we've had a couple hot days."

"Yeah I've heard of people doing this also. But refrigeration also slows the autolysis apparently. If it's not a clear fermenter and you're opening it to check on it, this will infect it. But yeah, otherwise, what Reviled said."

"Yeah I reckon it would take more than 6-8 weeks for autolysis to start happening, unless of course the beer was like 12% cos im sure that would kill off the yeast fairly quickly.. Last Munich Dunkel I did I lagered in the primary, 6 weeks after…"

"I was listening the the Brewer Network podcast yesterday at work... while working of course... and one of the guys lagered in primary for 4 - 6 weeks, and if there was still DMS he left it another 2 weeks. I have personally left my lagers on trub…"

Beer of sorrow update



Well I'm drinking a beer, but it is a beer of sorrow. I just checked a sample of the brew and it hasn't got into the yellow "bottle" portion of the hydrometer... I guess I really need that temperature control! Especially after reading a few forum posts... and especially this one:

During beer update:



The bubbling has stopped... the barrel has cleared significantly, although the bottom of the barrel looks quite dark... perhaps I didn't mix the mixture properly in the beginning?



Anyway I'll leave it another day and then get on with the bottling, I got 30x 750ml plastic (PET) bottles in the beginners kit and I can see why they're good to learn with. However... after pouring a couple of bottles of… Continue

Just before bed update:



Well, not much to report today... it's still bubbling away at 18C... I didn't have time to get a heatpad....



I'm thinking since different beers and yeasts work better at different temperatures wouldn't it be best to get a feedback control for the heatpad? So it looks at the temperature and adjusts it's heat output based on the reading...



Well I think it would be cool anyway.

(Thursday, 28th August 2008)



After Dinner Update, 7:30 pm



Ok, the bubbling has slowed down noticeably, it's around 10 seconds between each 'bubble', but it has also cooled down a bit -- back down to around 18-20C (it was up at about 24C when I had the heater in the room).



It kind of looks gross in the barrel (I have a semi-see-through lid) but it smells like really good beer... so I'm crossing my fingers and hoping for the best.

Mid Day Update:



I’ve been worried that I didn’t sterlise everything properly... but after talking to a friend who has been brewing for years I’m a bit more relaxed about the whole thing. He blasts his equipment out a couple of times with a high pressure hose straight after use, and then rinses it with boiling hot water before and after use without any sort of sterlisation powder...

I use a fridge controlled by one of these: http://www.mashmaster.com/p/365439/fridgemate-mkii-digital-temperature-controller-kit.html

You could use that controller to switch your heating pad on when temp. drops below a point you specify though.

Hey Ant, Apologies for not replying, I had no idea that you weren't notified of messages when you logged in.

As for Galway Hooker, it's a kick-ass IPA from my hometown back in Ireland. I've never seen it outside of Ireland though. If I come across it, I'll holler at ya.

As James P says, I'm glad to see another Chch brewer and I'm keen to jack up some get-togethers as we go!
