This is another iteration of the sort of thing I've been working on - answering a question - what is NZ pale ale. I thought I'd begun to hone a pair of recipes - a pale, and also an amber... but then this was a bit of an accident - it was supposed to be the amber but was far too light.... so it's a bit of both. See what you think.

This only went into the bottles on the 27/6, so maybe give it a week or two.

15.00 g Motueka [7.00 %] - First Wort 60.0 min Hop 5 12.8 IBUs
5.00 g Southern Cross [13.00 %] - First Wort 60.0 min Hop 6 7.9 IBUs
20.00 g Motueka [7.00 %] - Boil 10.0 min Hop 7 5.6 IBUs
10.00 g Southern Cross [13.00 %] - Boil 10.0 min Hop 8 5.2 IBUs
30.00 g Motueka [7.00 %] - Steep/Whirlpool 10.0 min Hop 9 4.2 IBUs

Also 1 tsp of 5.2 pH buffer into the mashing water while heating.

Dry hopped a mix of about 40g total of Wakatau, Moteuka, Southern cross

Hop 10 7.9 IBUs

Mash 68deg. Boil 1 hr.

Whirlpool hops added at flame out, and started chilling with immersion chiller immediately - I figure it was about 10 mins to get under 80deg.

Bitterness: 43.7 IBUs
Est Color: 25.6 EBC

Actual Alcohol by Vol: 5.6 %
Boil in a bag, efficiency ~70%.

Hi Greg, tried your Golden Ale in the weekend. It poured reasonably clear with a good white head. Good nose and first sip is a  nice early bitterness. I found once the initial bitterness left the tongue there wasn't much else, I think it would benefit from a bit more late hops but generally a nice beer. Thanks Greg

Hi Greg - Catching up on my notes from last week. 

Appearance -  A nice golden brown. I had left it in the fridge for quite a while before opening - but fairly cloudy in the glass with a small head then went fairly quickly.

Aroma - A bready/malty aroma - I couldn't pick out those hops you put in as dry hops.

Taste - A slight off-flavour after the initial few swallows that took away the nice bitterness from the first sample.

I'd be interested to know what yeast you used - maybe that was the reason for the flavours I experienced as your grain/hop bill looks pretty standard and a good recipe.

I used US-05. I've thought about your comments and tried a few sips a couple of times, and what I've come to is that I don't know! This beer was a surprise - completely different colour and flavour from what I thought I was making. In the bottle I reserved for myself I can't taste the hops either - and there is a spicy/earthiness which I don't know where it has come from.

One for experience perhaps.

Mystery beer in thevfridge has now been identified, long over due for consumption, I really like the colour, to me that is bang on for an amber, slight haze, bright white head that lasts. Nice malt character, hops may have been more pronounced a couple of months ago. Spirtzy carb, comes alive in the mouth, light/thin mouth, dry finish, no lasting bitterness. Im getting the hint an earthy spice as well. Gthanks for sharing and sorry I didnt get to it sooner
