Hi all,

This week I've been growing some yeast out of a bottle of Emerson's Weissbier.

 

My process is:

  • Pour out most of the beer, leaving as much sediment as possible
  • Flame the lip of the bottle
  • Pour lightly hopped, boiled then cooled, 1.040 wort directly into the bottle up to about 400ml total liquid (careful not to spill any down the outside of the bottle!)
  • Flame the lip of the bottle again
  • Cover the bottle with boiled aluminium foil
  • Swirl bottle as regularly as I can for 5-7 days
  • Pitch the resulting liquid into a small batch of beer (2-4L)
  • Use the yeast from the small batch to ferment a full sized brew

However yesterday I got home from work to find that the krausen in the bottle had gotten so large that some liquid had spilled over the top (this has never happened before... Must be because this yeast is so fresh and healthy!)

 

What do you guys think about using the yeast from this bottle in a small batch tonight or tomorrow?

Assuming the tin foil didnt get pushed off then I would still use it. Stuff was going out of the bottle not into it. You can always test the small batch to make sure it tastes alright before you get to the big batch.

or if this is the answer you want to hear I could say: You will have to buy some more Emersons and drink it im afraid, to be on the safe side. - oh yeah and then save the yeast.
That's pretty much what I was thinking...
Just wanted a second opinion to make sure I wasn't just being stupid :)

How did you go with the brew? Did it go ahead?
I did end up using the starter.

Used it with 2L of a fairly simple beer to step it up.

It's still in the fermenter, but it look and smells okay. It'll be time to bottle this soon and use the yeast cake from it on a full sized batch of hefe :)
