I've been experimenting with making my own recipes lately, and I have been wanting to do an IPA with NZ hops. Although the grain bill is standard for an IPA, I have created a hop schedule of my own that will let me get two 21L batches out of the 100g bags I'll buy. I like citrusy ales, with lots of hop flavour/aroma, so I've tried to incorporate that.

Batch Size (Gallons): 5.5
Original Gravity: 1.066
Final Gravity: 1.017
IBU: 68-72
Boiling Time (Minutes): 60
Color: 10 SRM
Primary Fermentation (# of Days & Temp): 14 days at 18C

5kg Pale Ale
0.45kg Munich Medium
0.35kg Crystal 60L

42g Pacific Jade @ 60 minutes

15g Cascade @ 15 minutes
15g Wai Iti @ 15 minutes
15g Cascade @ 5 Minutes
15g Wai Iti @ 5 minutes

20g Cascade Dry Hop for 7 days
20g Wai Iti Dry hop for 7 days

So, any opinions on this? I'd rather keep the number of hop varieties low, as I don't want to have too many open bags of hops in the freezer.

Personally? Needs way more hops. 

Where are you buying hops from that only lets you buy in 100g quantities? 

I hear ya. I buy all my ingredients from The Brew House in wellington, and they stock the 100g "NZ Hops" bags. Where would you suggest purchasing them?

Brewers Coop will package up any amount for you over 50g I think - I use them for anything I don't buy in bulk because they're local to me.

And you can go into the hop fridge and stick your snout in the containers....mmmm heaven. But shhh keep that one quiet or everyone will do it.

I have been meaning to try the cascade wai iti blend, in my imagination it should work well.

If you want to experiment you could double all the late and dry hops and use half the amount of bittering hops.

Sounds like this is what I'll have to do to get the properties I'm after. I will probably end up increasing the late additions a fair bit.

I think what ye have got planned there looks fine.... after you brew it you will know if you want the hops profile to change or not.

 

I prefer late hops of PG or Southern Cross... but that is just me.

i recently did one, with NZ Cascade and Motueka, 30g @ 10 and Flameout, plus a hefty PJ Bittering addition. and the remainder of the hops in at dry hop. (40g) of each, turned out nicely.

I'd personally add a 0min too.... I've tried 5 mins, and you don't get as much of the Aroma, that my opinion anyways.

i agree i think that much pacific jade that early while making bitter makes a lingering bitter that is a bit harsh, YMMV    I love the hop but 42g at 60min is too much personally.

Also I think that a 90 min boil is a good thing as well.  The more I read the more I hear about craft guys in the us doing longer boils.  would like other opinions about this? 

Yeah read some time ago that a 90 boil for ales is required to remove all DMS... so I target 75 minutes and use extra time for volume boil off etc. Heavier brews get the full 90 minutes (the more grain the more DMS).

So, after reading all the responses to the recipe, I've decided I need to add more hops, and change the bittering hop to Pacific Gem. I could either order more Cascade and Wai Iti and add 1.5x more of each, or add another hop like Nelson Sauvin or Motueka for late additions. I'm leaning towards the Sauvin, but I have no problem with either option. Boiling time has been changed to 90 minutes, and mash schedule adjusted appropriately. Hop schedule would be as follows:

40g Pacific Gem @ 60 minutes

15g Cascade @ 15 minutes
15g Wai Iti @ 15 minutes
15g Nelson Sauvin @ 15 Minutes
15g Cascade @ 5 minutes
15g Wai Iti @ 5 minutes
15g Nelson Sauvin @ 5 Minutes

20g Cascade Dry Hop for 7 days
20g Wai Iti Dry hop for 7 days
20g Nelson Dry hop for 7 days
