I am about to put down a Brewcrat Ginger Beer Kit. It says that instead of sugar I can use honey. Can anyone tell me does it have to be any particular sort of honey? If so what? Is there anything else I need to know or do if I go this way with it? Thanks.

Just get some of that cheap golden coloured stuff. It's probably about 80% Brix, so you will need to factor that into how much sugar the recipe calls for. i.e. If the brew is 1kg sugar, you'll need 1.25kg of honey.

No wories. I don't normally make Ginger beer, but I work with sugary syrups all the time - and thought the brix info would be handy.

Will you be making an alcoholic Ginger Beer?
Yep, definitely go for the alcoholic version. (So far I have done a couple of stouts and a couple of ales. Great fun and all have turned out pretty well so far.)
