Have female and male hop plants that are either Target, Magnum or Nordbrau.

I am hoping to find out which ones the are to nail it down but I think I have to squeeze another hop in my fingers to suss it out from the aroma and description I have seen on line. Is it best to pick off the biggest and the hops that are just turning a bit brown now and to vaccum seal straight away or do I need to dry them out first. someone has said something about wet hops and freezing them, whats that all about and is it the easiest way to preserve them until I can start brewing them, Novice chef that wants to brew the old school way but don't have time at the moment. Unfortunately, I found out too late about the males being redundant so all hops will have seeds now but I am wanting to keep the seeds anyway just in case and so I can grow more and make sure to get rid of males straight away next time. I am happy to sell some females males if anyone else would like them. can attach photos later
