So, I was given a Wyeast 1203 - Burton IPA yeast blend by a colleague and figured this is the perfect opportunity to brew up my first ever IPA (Been too busy doing wedding beers, Irish Red Ales, Brown Ales and Porters) and found what appears to be a really nice recipe:

I was just wondering if anyone here has used Chinook to dry hop?  I also wondered about making it MORE English but I don't know the English Hops very well.  So I was also wondering if anyone had used something like Southern Cross (which was listed somewhere as an alternative to Chinook)?

 

Other ideas are gratefully accepted.
